International Butcher Team showcase their skills

UK International Butcher Team, Lucy Crawshaw and Joe Smith, impressed hundreds of young people with their culinary skills at London’s Guildhall recently.

The duo showcased their skills producing continental style products and making traditional English sausages at the Livery Showcase Event.

The event, which provided the opportunity for city livery companies to demonstrate their involvement in the modern world, was hosted by Livery Schools Link on Tuesday 15th March.

The Worshipful Company of Butchers (WCB) was one of many livery companies present at the event, which also gave the companies the chance to demonstrate apprenticeship opportunities to teachers and school children in and around the capital.

Lucy and Joe had the chance to showcase their skills in making products and producing sausages made with meat from English pork, minced and mixed with seasonings, then filled into casings before being cooked and sampled by visitors of all ages.

This follows a five day trip to the SVO Specialist Meat School in Best, Holland, where they both had one-to-one tuition in ‘continental’ techniques. This was made possible with extra funding from the WCB in preparation to compete against other elite appearances from Austria, France, Germany, Holland and Switzerland at the International Young Butcher Competition in Frankfurt in May.

Lucy, who works at Taylors Farm Shop in Lathom, Lancashire, will also join Joe from Lishman’s of IIkley, Yorkshire, for two days next month ‘breaking and steaming’ beef at ABP’s facility in Langport.

They will then go on to perform a master class alongside UK International Team Coach Viv Harvey at Foodex in April, and complete final training at Leeds City College prior to leaving for Frankfurt in May.

The pair also celebrated their success at London’s Meatopia last September and enjoyed a four week visit to the Danish meat training college in Roskilde in January.
