Q Guild names Gordon Wallace as manager

Gordon Wallace, a fifth-generation butcher from Scotland, has been appointed as the new manager of the Q Guild.

With over thirty years senior management experience in the meat industry and ten more in education, the Q Guild says Wallace will bring a wealth of experience and a passion for the development and promotion of the butchery craft and its practitioners.

As an approved supplier to the former Glasgow College of Food Technology, Wallace voluntarily delivered butchery demonstrations to its chef students, an activity which he described as: “A great privilege and one that just seemed to evolve into a full-time occupation.” 

A graduate member of the Institute of Meat, he has been responsible for the training and development of butchery apprentices the length and breadth of the country as a freelance assessor with Craft Skills Scotland and part-time lecturer with the City of Glasgow College.

Asked about his new position, Wallace said he views the move to Q Guild as: “A rare opportunity to play a key role in the promotion of an organisation which represents our country’s finest craft butchery practitioners.” 

He is also a Board member of Quality Meat Scotland and sits on its Butchers Marketing Advisory Group.
