The British Game Alliance (BGA) has partnered with London-based Scottish restaurant and butcher Mac & Wild to create Grouse Cooking Kits.

Each cooking kit will include a brace of grouse, sourced from BGA registered processor Ardgay Game in Scotland, to celebrate the Scottish heritage of the bird in harmony with Mac & Wild’s ethos as a business. By using BGA assured grouse, Mac & Wild says it is confident it is providing its customers with meat that has been sustainably harvested and produced to high environmental and welfare standards.

The kit has been designed to recreate a traditional roasted grouse for two, served on toasted brioche loaf with a dirty chicken jus, charred red pepper and spring onion. The kit includes a step-by-step recipe card so customers can recreate the dish at home.

Liam Stokes, BGA chief executive, said: “This season will be about bringing restaurant-quality game dishes into people’s homes. We hope people are able to get out and support their local restaurants, but if they can’t, or if they just fancy a night in, the BGA is working to make game more accessible to people cooking at home.

"We are delighted to have partnered with Ardgay Game and Mac and Wild to deliver grouse, that loftiest game bird, straight into kitchens across the country. We think Andy’s wonderful recipe will open people’s eyes to the possibilities of cooking this wonderful bird at home.”

The kit can be purchased through the Mac & Wild section of the Restaurant Kits UK website and will be available from the 12th August. The price of each kit is £39 and includes all ingredients needed to create the dish.
