NCB plans another charcuterie taster day in April 2020

National Craft Butchers (NCB) is planning to run another charcuterie taster day in April 2020.

Barry Walker of Cured, Rich Summers, NCB’s technical manager, Richard Stevenson and Primary Authority partner Paul Hobbs,  will be on hand to answer charcuterie process questions from carcase to shelf.

The event is open to all craft butchers, including non NCB members. NCB Members will receive a discount. The cost is £180.00 inc. VAT.

The first workshop was part of the NCB’s launch of its Primary Authority Assured Charcuterie Advice.

Richard Stevenson said: “We were very pleased to have been able to arrange this subsidised Taster Day for member. We were thrilled and delighted it was such a success bringing real benefits to those attending.”

Darren Morgan, an NCB member from Telford, who attended the first day said: “I have nothing but praise for this event. I took a lot away from it and it will certainly add another string to my bow. I picked up all sorts of new ideas and tips and it was really interesting to learn some of the science behind charcuterie production.”
