UK butchery team hones its skills for the IYBC

Chris Riley and Peter Rushforth are busy honing their skills and products to represent the United Kingdom (UK) at the International Young Butcher Competition (IYBC) taking place in Holland next week.

The competition, which takes place on the 21st and 22nd September in Utrecht, is one of the leading contests for 18 to 23 year old European butchery apprentices. Teams from Austria, Germany, Holland, Luxembourg, Switzerland and the United Kingdom will all be taking part.

22-year old Walter Smith assistant manager Chris from Huntingdon, Cambs and 20 year old Peter of Swans Farm Shop in Mold, Flintshire have been undergoing intensive training and tuition from industry consultant and UK team coach Viv Harvey and ‘orange butcher’ Marco Peerdeman.

The team has been practising its seam butchery and developing products like Wyevale and Ffrith farm terrines, Huntingdon and Cambridge roasts and Flintshire and fenland easy carve chicken in a quest to win the team prize, category trophies and title of International Young Butcher 2015.

The International Young Butcher UK team, organised by the National Federation of Meat and Food Traders (NFMFT), is sponsored by ABP (UK), AHDB Beef & Lamb, AHDB Pork, Dalziel, The Institute of meat (IOM, Leeds City College, Orange Butcher, Raps (UK), Weddel Swift and the Worshipful Company of Butchers.
