UK International Butcher Team, Lucy Crawshaw and Joe Smith, impressed judges at the International Young Butcher Competition at IFFA in Frankfurt, Germany, last weekend.

The duo competed in six categories against other apprentices from Austria, France, Germany, Holland and Switzerland.

Team UK finished fifth overall, with Crawshaw taking third place working with an LMC of beef in the surprise category and finishing eleventh.

Smith ranked ninth overall, narrowly missing out on third place in the ready to eat Europe’s regions category with a chicken terrine.

International Butcher Confederation (IBC) president and Luxembourg butcher Jean-Marie Oswald complimented the UK team on its performance, and noted how much progress has been made compared to UK performances of the past.

The title of International Young Butcher 2016 went to Maarten Wolters of Holland. He received a first in the barbecue category, a second in the main course category, a joint third with Crawshaw in the surprise category and third place in Europe’s regions.

The team trophy went to Switzerland. Competition runner up Natacha Henzer received a category first for the main course category, and a trio of seconds in the kitchen ready, barbecue and surprise categories.

Her Swiss team mate Sandra Linder finished third with three category third places in the main course, kitchen ready and barbecue categories.

The French dominated the first of the two day competition with firsts from Godefroy Piaton in the Europe’s regions, surprise and seam butchery categories. In addition, his team mate Pierre Martin got a second in seam butchery.

On day two the Dutch and the Swiss came to the forefront, leaving a Europe’s regions second place for Felix Eberhadt of Germany and a third in seam butchery for Austria’s Christoph Luger.

The International Young Butcher 2016 UK team is organised by the National Federation of Meat and Food Traders (NFMFT).
