Lancashire’s Ryan Healy of Riley’s Butchers near Burnley and Cheshire’s Matthew (Matty) Edwards of Vaughan Family Butchers, Penyfford near Chester are prepared and ready to represent the UK in this year’s International Young Butcher Competition in Switzerland later this month.
2013 Premier Young Butcher champion Ryan and runner up Matty, will compete in Ready to Eat, Stuffed Roast, Seam butchery, Barbeque, Kitchen Ready and Main course categories against other 18 to 23 year olds from Austria, France, Germany, Holland and Switzerland.
Both Ryan and Matty have undergone a programme of intensive training under the direction of Viv Harvey of RAPS (UK) with facilities provided by Leeds City College since the early part of the year. And the support of the National Federation of Meat and Food Traders and sponsors BPEX, Dalziel, EBLEX, the Institute of Meat, Meat Training Council, Weddel Swift and the Worshipful Company of Butchers.
Travelling with Viv and the team for the competition in Bazenheid near Zurich on the 12th and 13th of September, will be BPEX Butchery Product Manager and CEO of the Institute of Meat Keith Fisher who will represent the UK on the international Jury of judges.
The competition, organised by the International Butchers Confederation (IBC) is recognised throughout the World as the most prestigious competition for 18 to 23 year old butcher apprentices in Europe.
Federation President John Mettrick said: “This is the best resourced team to represent the UK in the competition to date and I am sure that every craft butcher throughout the country will be supporting Ryan and Matty in their attempt to improve on the performances of previous teams in earlier years!”
