HG Walter Butchers, based at Baron Court in Hammersmith, London, has been named the 2017 Butchers Q Guild Smithfield Awards supreme champion for its Bourbon Glazed Dexter Beef Short Ribs.
Open to the Q Guild’s 123 members nationwide, the 2017 Smithfield Awards attracted a record entry of almost 600 individual products, from 61 butcher businesses from the Scottish Highlands down to the south coast.
HG Walter, an independent, family run business which was set up in 1972 and now supplies over 30 Michelin Star restaurants, entered the Smithfield Awards for the first time.
Its Bourbon Glazed Dexter Beef Short Ribs was marked 100 out of 100 and received a diamond award in the Kitchen Ready Products and was chosen as Best Beef England Product before it received the supreme championship.
Adam Heanen, who developed the recipe, commented: “It’s awesome. We’re very happy. It’s been a team effort. We’ve never entered into the Smithfield Awards before, this was our first time, but it certainly won’t be our last.”
Speaking about the winning recipe he added: “It’s a bourbon glazed rib, with maple syrup, cumin and paprika – we put the rub on it and leave it overnight, then we water bath it for four hours and finish it off by roasting it at a high temperature.”
HG Walter scooped five gold awards in total, others going to its Honey Roast Ham, Scotch Eggs, Scotch Quail Eggs and Butterflied Leg of Lamb with Anchovy and Balsamic.
Judged blind by independent panels of international food and meat industry experts, a total of 267 gold award winners were named at the Smithfield Awards. The winners were presented with their awards by British food writer and critic Tom Parker Bowles at the Ironmongers Hall in London recently.
