National Craft Butchers (NCB) will launch its ‘Charcuterie Assured Advice’ to supplement its ‘Primary Authority Food Safety Assured Advice’, next Sunday 30th June 2019 at the Grand Hotel, York.
NCB and Primary Authority Partner, Horsham District Council, has produced the ‘Assured Advice’ specifically to explain how complex preservation methods, which do not involve simple cooking work and make charcuterie presentable, tasty and nutritional as well as cost effective and safe.With charcuterie gaining more and more popularity with consumers, NCB president elect, Tony Luckhurst, said: “This new ‘Assured Advice’ is the perfect tool for those already producing charcuterie and for those looking to add it to existing lines.”The advice has nine chapters and includes appendices with background information as well as generic example HACCP plans and blank template monitoring forms.The Primary Authority Partnership between NCB and Horsham District Council has legal status in accordance with The Regulatory Enforcement Sanctions Act 2008 as amended by the Enterprise Act 2016.Primary Authority has been strongly backed by successive governments and is a flagship policy in the reduction of red tape.NCB chief executive Roger Kelsey said: “We have been working with Horsham DC on the new ‘Advice’ for some time and are delighted to be launching it at our Members’ Day giving yet another aid and opportunity for our members to increase their offer to consumers and satisfy local authority enforcement.”
